Introduction
Add a delicious and nutritious twist to your meal with these Zucchini Fritters! This kid-friendly recipe transforms humble zucchinis into crispy, savory fritters, perfect for a light lunch, a tasty snack, or a side dish. The whole family can join in on the fun of grating, mixing, and frying these delightful morsels.
Ingredients
3 medium zucchinis, grated
1 egg, lightly beaten
½ cup grated Parmesan cheese
¼ cup all-purpose flour
¼ cup chopped fresh parsley
1 clove garlic, minced
Salt and pepper, to taste
Olive oil, for frying
Sour cream or Greek yogurt, for serving (optional)
Cooking Instructions
Place the grated zucchini in a colander, sprinkle with a pinch of salt, and let it sit for 10 minutes. This will help release excess moisture.
In a large mixing bowl, combine the beaten egg, grated Parmesan cheese, flour, parsley, garlic, and season with salt and pepper. Mix well.
Using a cheesecloth or clean kitchen towel, wring out any excess moisture from the zucchini.
Add the zucchini to the bowl of ingredients and mix until well combined.
Heat a thin layer of olive oil in a large skillet over medium heat.
Using a ¼ cup measure, scoop the zucchini mixture into the skillet, gently flattening each fritter with a spatula. Be careful not to overcrowd the pan.
Cook the fritters for 3-4 minutes per side or until golden brown and cooked through.
Transfer the cooked fritters to a paper towel-lined plate to absorb any excess oil.
Repeat steps 5-8 with the remaining zucchini mixture.
Serving Suggestions
Serve Zucchini Fritters warm, topped with a dollop of sour cream or Greek yogurt (optional), alongside a fresh green salad, or as a delightful addition to your brunch spread.
