Ingredients


  • 1 tbsp olive oil

  • 1 large onion, chopped

  • 4 garlic cloves, minced

  • 1 tbsp chili powder

  • 1 tbsp ground cumin

  • 1 tsp smoked paprika

  • 1/2 tsp cayenne pepper

  • Salt and pepper, to taste

  • 8 cups vegetable broth

  • 1 (28 oz) can crushed tomatoes

  • 1 (15 oz) can black beans, rinsed and drained

  • 1 (15 oz) can corn, rinsed and drained

  • 4 corn tortillas, sliced into strips

  • Optional toppings: fresh cilantro, avocado slices, lime wedges, shredded cheese, and sour cream or Greek yogurt


Cooking Instructions


  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for 5 minutes, or until softened.


  2. Add minced garlic, chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for an additional 1 minute, stirring frequently.


  3. Pour in the vegetable broth and crushed tomatoes, stirring to combine.


  4. Add the black beans and corn and bring the soup to a boil.


  5. Reduce heat and let the soup simmer for 20-25 minutes, allowing the flavors to meld.


  6. While the soup simmers, preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.


  7. Spread the tortilla strips on the prepared baking sheet, and bake for 10-12 minutes, or until crispy.


  8. Serve the soup hot, topped with crispy tortilla strips and your choice of optional toppings.
