Ingredients
12 oz jumbo pasta shells
1 (24 oz) jar marinara sauce
1 tablespoon olive oil
1 (24 oz) container whipped cottage cheese or ricotta cheese
2 cups fresh spinach, chopped
1 large egg
1 teaspoon Italian seasoning
½ teaspoon garlic powder
¼ teaspoon salt
⅛ teaspoon black pepper
2 cups shredded mozzarella cheese, divided
Cooking Instructions
Preheat the oven to 375°F (190°C).
Cook the pasta shells according to package instructions, adding 1 tablespoon of salt to the boiling water. Drain the shells and set aside to cool.
In a large mixing bowl, combine the cottage cheese (or ricotta), spinach, egg, Italian seasoning, garlic powder, salt, and pepper. Stir in 1 cup of mozzarella cheese.
