1 cup diced tomatoes (canned or fresh)
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1 cup shredded mozzarella cheese (or your preferred cheese)
1 tbsp olive oil
Optional: 1/2 cup cooked rice or quinoa (for added texture and volume)
Optional: Fresh parsley or basil for garnish
Cooking Instructions
Prepare the Bell Peppers:
Cook the Ground Beef Mixture:
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the finely chopped onion and sauté for 3-4 minutes, until it becomes translucent.
Add the minced garlic and cook for an additional 1 minute until fragrant.
Add the ground beef to the skillet.
Cook, breaking it up with a spoon, until it is browned and cooked through, about 7-8 minutes.
Drain any excess fat from the skillet. Stir in the diced tomatoes, Italian seasoning, salt, and black pepper.
If using, stir in the cooked rice or quinoa at this point.
Let the mixture simmer for 5-7 minutes to allow the flavors to meld together.
Stuff the Bell Peppers:
Bake:
Cover the baking dish with aluminum foil.
Bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve:
Remove the stuffed bell peppers from the oven and let them cool slightly before serving.
Garnish with fresh parsley or basil, if desired.
Serve the stuffed bell peppers hot, either on their own or with a side salad.
Tips
Choose bell peppers that are uniform in size and shape for even cooking.
You can use any color of bell pepper you prefer or create a colorful mix for a more vibrant presentation.
To make this recipe vegetarian, replace the ground beef with a plant-based protein alternative like lentils, tofu, or tempeh.
If you prefer a softer bell pepper texture, consider parboiling the peppers for 2-3 minutes before stuffing and baking.
Adjust the seasoning and cheese to your liking or experiment with different herb and spice combinations for a unique flavor profile.
