  3. Rich in Antioxidants: Mushrooms contain antioxidants, which help reduce inflammation and promote overall health.

Ingredients

For the Pasta Dough:

  • 2 cups whole wheat flour

  • 3 large eggs

  • 1 tsp olive oil

  • 1 pinch of salt

For the Mushroom Filling:

  • 2 tbsp olive oil

  • 1 large onion, chopped

  • 4 cups mushrooms, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup chopped parsley

  • Salt and pepper, to taste

For the Sauce:

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 (28 oz) can crushed tomatoes

  • Salt and pepper, to taste

Cooking Instructions

  1. Make the pasta dough: Mix flour and salt. Create a well in the center, and add eggs and olive oil. Slowly mix until a smooth dough forms. Knead for 10 minutes, then let it rest for 30 minutes.

  2. Prepare the filling: Heat olive oil in a pan. Add onion, mushrooms, and garlic. Cook until tender. Let cool, then add Parmesan cheese and parsley. Season with salt and pepper.

  3. Make the ravioli: Roll out the pasta dough into thin sheets. Place small dollops of filling onto one sheet, then cover with another sheet. Cut into ravioli shapes.

  4. Cook the ravioli: Bring a pot of salted water to a boil. Add ravioli and cook until they float, about 3-4 minutes.

  5. Make the sauce: Heat olive oil, then sauté minced garlic. Add crushed tomatoes and simmer for 10 minutes. Season with salt and pepper.

  6. Serve the ravioli topped with the tomato sauce and a sprinkle of Parmesan cheese.
